Mexican Chili Mince with Lettuce Cups and Avocado Salsa. Mince is one of my go-tos when I want something healthy but filling. You can add so many things to it! This recipe is a hearty dish with the chili mince and brown rice, but is lightened up by the tangy avocado, and the fresh crunchy lettuce cup. A match made in heaven really!

Another bonus to this meal, it could feed an army, and is a great way to increase your vegetable intake, while also removing a heavy bread base. My suggestion; this spicy meal, outside on the deck this summer, with a berry smoothie, and you will feel like you are still on holiday mode πŸ™‚

Mexican Chili Mince Lettuce Cups with Avocado Salsa.
INGREDIENTS

Mexican Mince:

  • 500g of lean mince
  • 1 can of whole corn kernels
  • 1 can black beans in chili sauce
  • 1 tsp cayenne pepper
  • 1 can diced tomatoes
  • 2 tsp minced garlic
  • Salt and pepper to taste

Avocado Salsa:

  • 1 large ripe avocado
  • 1 large finely diced tomato
  • 1/2 red onion (finely diced)
  • 1/2 red + green capsicums (finely diced)
  • 1/2 a carrot (grated)
  • Juice of 1/2 a lemon
  • Salt and pepper to taste

– 2 packets of SunRiceΒ 90 second microwave Brown Rice (2 for $5 on special)
– Iceberg lettuce (large)

INSTRUCTIONS

  1. Heat olive or coconut oil in a large frying pan until sizzling
  2. Add mince, crushed garlic, and salt + pepper + cayenne pepper, Β and fry until brown
  3. Turn the heat down to a simmer and add in corn, can of diced tomatoes (might need to sieve some of the juice out), and black beans. Cook for another 10-15 min on low heat
  4. While mince mix is simmering, smash up avocado with a fork or whiz, and add lemon juice and salt and pepper
  5. Finely dice all salsa ingredients and either add to avocado mix, or leave to layer above mince and rice
  6. Heat rice in microwave.
  7. Choose the sturdier internal leaves of the lettuce as your cups, and begin layering brown rice, mexican chili mince, salsa, and finally avocado within your lettuce cup
  8. Eat!!
