Recipe: Raw Lemon Lime and Coconut Slice

Lemon Lime Coconut Slice.

Lemon Lime Coconut Slice. The temperature is getting warmer, and so are the cravings for refreshing food and drink. Lemons and limes are always a warm weather favourite, and combined with coconut, make a really fruity tropical mix.

This slice is really easy to make, and uses the same raw base that I have used for most of my raw treats, so it gets easier and easier very time 🙂

Raw Lemon Lime & Coconut Slice

INGREDIENTS:

Lemon Lime and Coconut slice.

For the base:

  • 1 ½ cup of cashews/almonds/both (soak for 15-20 mins in boiling hot water)
  • 12 dates (soak for 15-20 minutes in boiling hot water)
  • ½ cup unsweetened desiccated coconut
  • 2 Tbsp melted coconut oil
  • Juice of 1 medium sized lime

For the citrus filling:

  • 2 cups unsweetened desiccated coconut
  • 1 cup coconut milk
  • 2 Tbsp melted coconut oil
  • Rind and juice of 1 large lemon
  • Juice of 1 medium sized lime
  • If you need sweetener add 1-3 Tbsp. 100% maple syrup or raw honey

DIRECTIONS:

Line a 20 x 20 cm slice tin with baking paper (or use a silicone mould).

For the base:

  1. Blitz mixed nuts, coconut oil, dates, and lemon rind+juice in a food processor to form a smooth butter.
  2. Add  shredded coconut to the butter and whiz again until completely smooth.
  3. Transfer the smooth mixture in to the prepared tin and press down with a fork to make an even base.
  4. Place in the freezer to set.

For the filling:

  1. Add the coconut oil, coconut milk, lemon juice and ¾ of the rind and whiz until smooth.
  2. Pour the filling mixture on top of the base, smooth with a spoon to even out the top.
  3. Add the remaining lemon rind to the top of the slice.
  4. Place the cake back into the freezer for at least an hour before slicing and serving.
