This weekend, I knew I wanted to do some baking. The problem was, I was totally inundated with recipes – Pinterest, Instagram, Facebook, Yummly, bookmarked recipes, cook books, scraps of paper recipes taken from god knows where – I just had no idea where to start. So I thought muffins, yes that will be easy, I’ll find a quick and easy healthy-ish muffin recipe that I can use again and again with different ingredients.
This recipe makes the simplest, yummiest breakfast packed full of all the good stuff. Make this mix your own, add anything from your pantry; if you aren’t a fan of pecans or walnuts leave them out; if goji berries are too expensive, replace with cranberries, or anything your heart desires.

These pancakes are very low sugar, really tasty, and super filling. The banana really sweetens the mixture, and you can change it up with different protein powders for cool flavours.
